Fine Grand Cru chocolate is melted. Fruit concentrate and alcohol is added to the shiny mixture. Then comes the whey – the heart of the Truffle – and the ganache is ready.
At a temperature of 30 degrees Celsius the ganache is filled into hollow chocolate spheres.
